Aged Garlic Extract Powder

Aged garlic extract, or AGE for short, is made differently from regular garlic extract by allowing fresh garlic to age naturally for a long time under certain humidity and temperature conditions (usually room temperature or slightly higher). This process can go on for a long time (the well-known Kyolic brand, for example, ages for 20 months). This procedure is intended to change the strong, irritating substances that are naturally found in garlic and is mainly powered by enzymatic reactions. Lastly, water or ethanol is used to extract the aged garlic, which is then dried into a powder.
